Three million people in the United States suffer from Celiac disease — an immune reaction that results in damage to the inner surface of the small intestine and the inability to absorb certain nutrients. According to the University of Chicago Celiac Disease Center, approximately only 10% of those who suffer from Celiac disease have been officially diagnosed. Celiac Awareness Month was created primarily to help raise awareness of the disease, encourage testing and raise funds to help find a cure.
