In recognition of National Celiac Awareness Month in May, the Idaho Potato Commission (IPC) has partnered with blogger Amie Valpone of “The Healthy Apple” to create five  gluten-free recipes that feature America’s favorite vegetable. These recipes and many more are part of the IPC’s gluten-free recipe collection.

As awareness about gluten sensitivities has increased, so has the demand for gluten-free meal options. Frank Muir, president and CEO, IPC, says, “Not only are Idaho potatoes naturally gluten-free, but they are also an excellent source of fiber, vitamin C and potassium – and they taste great, too!”
