Red potatoes account for nearly one in six potatoes purchases, according to MountainKing Potatoes, one of North America’s largest marketer of red potatoes. Besides their great taste and ease of preparation, red potatoes pack a healthy punch, officials add, noting that just one medium red potato with skin provides approximately 35% of the recommended daily intake of Vitamin C and 16% of dietary fiber.
