In early June thousands of retail buyers descended upon the Colorado Convention Center in downtown Denver, Coloradough, to attend the IDDBA Dairy-Deli-Bake 2014 convention, looking for ways to make more “dough” for their dairy, deli and bakery departments.

They learned about how to merchandise donuts to increase sales....

...And how to mine the fresh salads in the deli case to increase profits.

There were also mountains of ideas on how to merchandise cheese.

Maria Emmer-Aanes and Margi Gunter of Litehouse Foods were touting their new stand-up pouch Blue Cheese and Gorgonzola Crumbles, as well as their Center Wheel, cut from the most flavorful center portion of the cheese wheel.

Alpine Valley Breads was featuring its new Organic Hawaiian Rolls, which are shipped frozen and can be slacked out in the deli or bakery departments with an 8-day shelf life, or sold frozen in the freezer case with a 30-day shelf life.

Ross Shuket, vice president of Old World Provisions (right) was sampling hot pastrami and talking about his company’s new all-natural rare roast beef that is seasoned with just salt and pepper and has no water added.

Old World Provisions manufacturers both brand name and private label products for chains that include Roche Bros. and Price Chopper.

Beth Bye of Harmony Specialty Dairy Foods was sampling a delightful Nut Brown Ale Cheddar at the Wisconsin Milk Marketing Board booth.

Cow Candy Fruit Flavored Snack Cheese was one of the more interesting new products at the show.

Cow Candy is a fruit flavored Monterey Jack cheese available in Green Apple, Strawberry, Orange, Grape and Fruit Punch flavors.

Alouette is making cream cheese healthier with its Smithfield Cream Cheese with Greek Yogurt, available in a variety of commercial and retail sizes, say company officials.

The Rich’s booth was a must-stop where show goers could sample the latest in cake frostings.

Rich’s debuted its new line of bar cakes – available in Triple Chocolate, Red Velvet and Carrot – that offer consumers portion control because of their smaller sizes.

Using pizza crust, Rich’s Quick Quiche ready-to-pour mix and other ingredients, like ham and mushrooms, retailers learned how to make a mile-high Quiche Lorraine that will add pizzazz to their service deli case.

Rich Products debuted its new line of Our Specialty brand flatbreads at the show, including one that is hinged to make a healthier hoagie.

Our Specialty flatbreads can be sold in the commercial bread, deli or in-store bakery department where they can create impulse sales from customers who are bored with traditional Kaiser rolls, say company officials.

Mark R. Monaco, sales associate, at Sandridge Food Corporation talks about the company’s new commercial grain salad kits, featuring quinoa, cous cous and wheat berries. Retailers are encouraged to use the kits as a base to create unique salads for their service delis and salad bars, he says.

Tortuga Rum Cake Company’s newest product is its delectable rum balls. They were being sampled by Tanya Lazarus and Robert Ward from the Miami-based company.

Reser’s makes the top-selling potato salad in the U.S., so it is only fitting that its American Classics Original Potato Salad balloon towered above the convention floor.

A key Reser’s promotion this year is a tie-in with NASCAR so an actual NASCAR auto was a key part of the booth.

Reser’s new Sensational Sides Buttermilk Deluxe Mashed Potatoes is filling a consumer love for buttermilk.

A version of the popular Chick-fill-A chicken breast sandwich is now available for the supermarket channel, thanks to Koch Foods. Brad Dunn, director of retail deli at Koch Foods offers passersby a tasty sample!

A mouthwatering delectable array of muffins, loaf cakes and coffee cakes were being samples at the Bake’n Joy booth.

Bake’n Joy’s new Hearty Oat Apple Raisin Nut muffins have already proven to be a runaway hit.

“Clean label” was the theme this year at Corbion Caravan, a leading bakery ingredient supplier. Visitors to the Corbion booth had the chance to sample gluten-free chocolate chip cookies that tasted just as good as their wheat flour-based counterparts.

The Vortex Cakes at the Dawn Foods booth were a big hit. The beautifully decorated layer cakes combine a traditional cake layer with another “hybrid” layer, like a cookie or brownie. And at only $12.99 each they are quite the value.

Sure to be a big hit during the winter months, the Polar Vortex cake features a chocolate chip cookie layer along with a white cake layer.

The Cake Boss merchandiser houses Dawn Foods’ Cake Boss fancy designer decorated cakes along with cake decorating tools from Meyer Corp. and cake decorations, including frostings, sugars and sprinkles to assist home bakers seeing to make their own designer cake.

A booth-within-a-booth at the Dawn Foods booth showcased the company’s new line of vibrant-colored frostings.

Based on consumer interest, Blount Fine Foods has created a line of organic soups designed for supermarket hot bars.

Among the products being featured at The Run-A-Ton Group’s booth was its sculpted cake line, available in several shapes, including castles, trees, gingerbread houses and flowers.
